The idea of this top-notch restaurant is focused on the traditional food served to Russian nobles, or to rich merchants who did their best to mimic nobles in the beginning of 20th century. The list is replete with game and exotic meat, such as bear and deer, as well as sturgeon and other fish delicacies. They also have dorado and seafood that were likely unheard of in the Russian empire. One part of the menu elaborates on the Tatar food that was allegedly served to Russian Empress Ekaterina II during her visit to Kazan in the end of 18th century.
